The reason people think he has different appearances isn't because of the Mandela Effect but because his appearance does change throughout the films, novels, games, comics as part of the story.

The Phantom Menace he didn't have metal coverings, silver right leg in A New Hope, and red left arm in The Force Awakens, Attack of the Clones he had copper plating just a few examples of his appearance change from the movies alone.

The appearance difference people see in him is completely explainable.
