There isn't a big difference between ios servers and other servers. Mostly everything is the same. Mouse actions on client will act as a finger on mobile. Some gui controls dont work on mobile but in the end not much is different.

Your totally correct, but your also putting the importance of GUI's too low. The idea of new movement controls would be great, but like I said GUI's are a big deal and sometimes can make games or servers unplayable. I've played delteria on iOS via puffin browser, which a lot probably have. Those GUI's obviously aren't meant for mobile and it is after all a browser that supports the game, but even on a platform like that the GUI's aren't that supported or easy to use. But just imagine just plugging them into an actual mobile platform, they would most likely be worst so I do think a lot of changes would have to be made to a server to make it compatible and enjoyable for iOS. Sure you can play delteria on iOS right now but it's not that fun, and not even because of the playerbase just because how it works on mobile at its current state just isn't fun. It would probably be the same with other playerworlds servers. Plus there's more than GUI's that would have to be changed anyway.
