Very well. As you mentioned they have a control advantage which if you have not noticed is actually a big advantage. When I'm sparring a PC user they always hold down the arrow keys to move straight up past you or as a trick. Can iDevice users do that? No. They can also just hold them together without moving anything else and it will look like they are caught in lag and leaves you wondering if they're lagging or are they going to appear somewhere else? Furthermore, they have an advantage in screen size. This effects guild spar. I am using my iTouch 3G and can only see a small range while the PC has a big screen and can see a much wider range. This helps them see players coming at them from farther distances and can easily avoid a surprise attack. Do iDevices have a screen size advantage? The iPad I heard does, but no one will take a picture and show how big it is compared to PC so I can't say much about that.
PC also has less lag since it is on a device that can handle more than a a tiny device with a bigger screen to reduce the amount of compressed area it's loading. These are the advantages I see in PC. I do not believe PC should be aloud on an iDevice game. If you wanted to play Graal on PC play PC Graal, not here.

Incorrect yet again, when I run fraps on my PC and have the FPS ticker, it caps at 30. I'm pretty sure all ipods 3rdgen+ can at least match this, or have a better fps. (I still can't walk through graal city w/o dipping down to slideshow status)
And, about the first half of your post, PC screens in the spar room just give you a view of the seats on the left and right, which is useless. I'd rather have it zoomed in on spar so my eyes don't drift away.
