Just have it shown in one GUI window with tabs dividing the staff by jobs, or a GUI with a sidebar.

This. But that would be a bit complicated and keeping signs might work better. Plus I like the signs better. More Graaly.
But the staff signs aren't very organized which bugs me for some reason (not to nit pick). Maybe a format like this would work better and be cooler:
