And what about new players that want to get into sparring but are scared to start because they are not necessarily good and cannot get good because they will most likely lose their money if they lose the spar? It just seems like a way to alienate new players again.

Hmm, how about to counter this, you could have two seperate single spar rooms, one friendly (still affects your w/l ratio), and one for gralats? There could also be a sign or a popup saying something along the lines of 'If you're new to sparring, we recommend you spar in the friendly spar room!'
Or there could be a system where new players need to wait 24 hours of playtime before they are allowed to spar, this cuts down on boosting and cuts out the new player issue all together tbh.
