I think it would be ideal for a time of year that has no holiday. However, aren't the staff busy enough with holiday programming?

The programming for GraalCon would be minimal.
All you do is you need an Lat to design the booth layout, then maybe a couple npcs and adding the freebies in. Maybe some other stuff but I'm not a scripter so I wouldn't know.
