When I make stuff I tell the person they can send me the money whenever while I work on whatever they want me to make. Everyone usually always pays me before I even start, but they don't have to. In a circumstance where someone wouldn't pay me until I was done (which hasn't happened to me yet) I would probably only show them a portion of the completed project or watermark it or something to let them know that i did do it and then give them the full thing once they've paid me.
Though I think this might be the other way around of what you're questioning...

They say they would pay first.
Now that I know that you can get refunds through paypal, I see why they "trust" me.
You don't really have to worry about being scammed, since you can just ban them, imo. (On graal at least)

I know that if you send the money as a donation it would be nonrefundable. Haven't tried refunding other payments though.

I guess an Amazon gift card would be a safe bet then? They can't refund that...
Unless they somehow steal a card, give me the code, and I get into some mess.
