I'm not trying to pick a fight, this is actually a serious question, but what makes a male a male or a female a female if not for their sex? Is it determined by behavior? Personality?

It's determined by how you feel on the inside. To just assume that someone is a specific gender by their personality, or behavior, is quite odd, IMO. You can never just know someones gender, because some people, like me, identify as male, but have very feminine personality traits. So it all depends on what the person identifies as.
Now, how people know they are their gender, differs from person to person. I know I'm male, because I never felt female in the first place. There's no one thing that told me I was male, I just always knew.

You are what you are born as and the only thing that's going to change that is surgery.
If I said right now "I want to be a girl, I am a girl" would that make me a girl? No it wouldn't. Would that give me the female gender? No it wouldn't.
Why? Because I'm a male, and I was born male. Until I get surgery to change that, I'm a male in sex, gender or whatever you want to call it.

Look, I get you're closed minded, but the least you could do is respect others for who they identify as, and now who YOU identify them as.
If you did, seriously say one day, "I feel like a girl. I identify as female." I would respect your choice and address you however you wished, be it female or male pronouns. Because it's the
polite thing to do.
