If you know your pitches really well on any instrument you can pretty much just sound out the notes (if you can't read sheet music or just never have done it) pretty much simple songs like hot cross buns and such can be transcribed into many different pitches then it is normally played

Going by pitch is definitely harder than reading sheet music if you can't play an instrument or sing for you life. But it's worth a shot.

The flute/piano is next to impossible to play on Graal without a lot of practice on an iPod seeing how the screen is very compressed and can press two notes at once. Not sure if an iPad has the same problem as an iPod, just takes time to get used to the small keys and such.
