How do u skin a animal an which ones can get skinned and I heard u can get a lasso, where???  

You can get Lasso from Saddles and Gun Shop, also available at certain shop. Saddles is the Horse Skin I guess

Saddles Horses are probably a skin, I got a black horse from Horse Shop and bought the rifle saddle and it can be worn on the horse

I am not sure yet what is it for or just a skin

There are a few animals, such as the black boar, snake, and chickens, that appear in large groups. If you attack one of them, all of them will attack back. It can be difficult to handle, but they occasionally drop skins/feathers to sell. They're smaller animals though. Not the big ride-able ones.
