The system could be some kinda timing based one? Like Megaton punch in Kirby superstar

Then it could run a generic animation of the two players on their selcected mounts and whoever had better timing wins

Plus it's a great showcase for mounts  

I think that'be cool but they can't just introduce it like this like it needs a special big event for example: The castle update , they also added accessories with it  

Only problem is if someone lags or delays that's going to make a difference in who wins or who loses. There needs to be a new competitive skill feature, something a little more than just timing.

What else could there be besides the skill and thinking of spars, teamwork and collaboration of towering, or the consistency and accuracy of the Archery place?

It's true, I over thought the mechanics and I like the three choice idea. Effective and simple but you'll still cuss like a sailor when you get dismounted

Well it would simply be known as Jousting RPS, then, which is no different than regular rps.
